1. How did you come up with the idea for BrindleBerry Catering and Events?

I started Brindleberry Catering and Events because I love bringing people together over delicious food. I noticed that there weren't many catering options offering both great food, and personalized service, so I decided to fill that gap. My goal is to create unforgettable experiences for our clients by focusing on quality, creativity, and excellent customer service.

2. What was your first job in the culinary industry?

A dishwasher.

3. What is your flavour philosophy?

Cultural influence and balancing flavours.

4. One ingredient you can’t live without?

Ginger.

5. A cooking utensil that’s always in your kitchen?

Spatula.

6. What’s your signature dish and why?

Curried Mutton Tacos. It’s a fusion of flavours from different culinary traditions, such as the combination of curry and tacos to create a unique and exciting flavour.

7. What’s your favourite type of event to cater?

A wedding reception. They are always so much fun.

8. Go-to cooking technique and why?

Sautéing. Allows for the quick cooking of ingredients over high heat, which can result in the caramelization of sugars and the development of complex flavours.

9. What’s your most memorable event you have catered?

It was a corporate event for Johnson & Johnson Canada.

10. What was the most stressful event you had to cater to?

Catering corporate events. 

11. Go-to place for sourcing ingredients?

Costco business center and MVR Cash & Carry.

12. Where do you go to eat on your day off?

Makimono Japanese Restaurant.

13. A restaurant you always wanted to work at?

Cano.

14. Your chef hero?

Chef Anthony Bourdain.

15. What’s next for you as a chef?

Expanding our catering company throughout the country and finding new opportunities.
