1. What was your first job in the culinary industry?
Dishwasher.
2. What is your flavour philosophy?
Make it bold!
3. One ingredient you can’t live without?
Chaat Masala.
4. A cooking utensil that’s always in your kitchen?
Metal tongs.
5. What’s your signature dish and why?
Butter Chicken Lasagne. This won me a reality competition called Recipe to Riches on the Food Network.
6. Go-to cooking technique and why?
Grilling because I love building flavours from marination to getting that slow smoke or char.
7. Best memory as a chef thus far?
Selling out my two week London, UK pop-up and having incredible folks travel from so far just to try my food. It’s humbling!
8. Worst memory as a chef thus far?
Trying to survive the pandemic. It took us everything to keep pivoting and get through to the other side stronger.
9. Go-to place for sourcing ingredients?
East India Spice Company. Incredible whole spices and family-run.
10. Where do you go to eat on your day off?
Tomo Sushi in Mississauga or I search for a good steak done Chicago-style.
11. A restaurant you always wanted to work at?
Dailo with Chef Nick Liu.
12. Your chef hero?
Anthony Bourdain for his incredible story-telling.
13. What’s next for you as a chef?
Expand my hospitality company throughout North America and keep learning.
